בשנת 2011 הקים פרופ׳ דוידוב את הארגון הבינלאומי Labour Law Research Network ועמד בראשו עד 2015. כמו כן שימש כעורך הראשי של כתב העת International Journal of Comparative Labour Law and Industrial Relations בין 2015 ל-2020. לפני כן שימש גם כעורך של כתב העת ״משפט וממשל״, העורך המייסד של ״חוקים״, ועורך-שותף של ״עבודה חברה ומשפט״.
בין תפקידיו בפקולטה הוא מרכז את הפורום לדיני עבודה ורווחה. בעבר שימש כסגן דיקן, מנהל אקדמי של המרכז לחינוך משפטי קליני, ראש מכון סאקר למחקרי חקיקה ולמשפט השוואתי, וראש הוועדה ללימודים מתקדמים.
פרופ׳ דוידוב הוא בוגר הפקולטה למשפטים באוניברסיטת תל אביב (1996) וסיים תואר שני ודוקטורט באוניברסיטת טורונטו (2002). לפני שהצטרף לסגל האוניברסיטה העברית ב-2007 לימד מספר שנים באוניברסיטת חיפה.
